Chris’s Recipes: Raw Inca Blue Birthday Cake

This is dead easy. If I can do it, you can.

Portion size - this is for one, so make the rest up as you go for a bigger serving:

Equipment:

  • A blender / mixer
  • A mould of some sort to shape the base of the “cake”, so long as it has a flat bottom, because that’s where you’re going to put your blueberries, when you turn it over.

Ingredients:

  • A mixed handful of walnuts and almonds.
  • Half a cup full of oats
  • About 6 or so Inca Berries - they add a nice tang apparently (I wouldn’t know - I didn’t taste it) but they’re optional if you can’t get them
  • 2 tbsp pre-soaked raisins, including their juice
  • 2 tbsp blueberries.

Method:

Soak your raisins for a couple of hours beforehand.

Keep the blueberries separate for now, and blend the rest of the ingredients until fairly smooth - you should be able to spoon them out of the blender into your mould and create a flat base (currently it’s inverted so you’ll be looking at the bottom of the “cake” once it’s in the mould).

Shove the mould in the freezer for 5 - 10 mins, however long you can wait.

Now empty the mould carefully onto a plate so it’s now the right way up, and out of the mould - the extra bit of juice from the soaked raisins should help with the consistency.

Then just place your blueberries lovingly on top of your cake “base”, and badabing! you’s got yourself a Raw Inca Blue (Birthday) Cake. It doesn’t have to be your birthday :)

Other Ideas:

If you’re not going raw, or you want to spice it up, why not turn it into cheese cake, by adding some ricotta before you add the blueberries, or you could add strawberries, the options are endless. You could even forget the base and use bread and bananas instead, but that would just be a banana sandwich wouldn’t it.
